AJ’s Secret Organic Chocolate Shape-Shifter Brownie Bites with Maple Butter Icing

Use this versatile batter for dessert mini muffins, standard muffins, brownies, or donuts.
Dry Mix
- Fine almond flour: 1 cup + 2 tbsp, lightly packed
- Coconut flour: 2 tbsp
- Coconut sugar: 1/2 cup + 1 tbsp
- Unsweetened cacao powder: 1/3 cup + 1 tbsp
- Arrowroot powder: 2 1/2 tbsp
- Baking soda: 1 tsp
- Fine sea salt: 1/2 tsp
- Dairy-free Hu semi-sweet chocolate chips (whole bag/7oz)
Wet Base Ingredients
- 1 can (15 oz) aduki beans — do not drain; use the entire can, including the liquid/aquafaba
- 2 large eggs
- 1/4 cup pure maple syrup; sometimes I might let this overflow the cup
- 2 tbsp ground flaxseed (I know this is dry, but mix with wet ingredients)
Instructions
Note: The oven temperature remains the same across all options at 350°F (175°C), but bake times vary by style and pan size: mini muffins take about 18 minutes, standard muffin tins take 20+ minutes, and donuts will depend on your pan size. If you’re baking a full pan of brownies, plan for closer to 30 minutes depending on your baking dish. For any option, use the toothpick test for doneness—it should come out mostly clean or with just a tiny bit of chocolate residue.
- Preheat oven to 350°F (175°C).
- Prepare your pan: line a 12-cup or 24-cup muffin pan with liners or grease lightly; for donuts or a full brownie baking dish, spray the pan or dish well. Avocado spray oil is recommended.
- Combine the entire can of aduki beans (including the liquid), with the eggs, pure maple syrup, and ground flaxseed. Blend until completely smooth and velvety.
- In a separate bowl, thoroughly mix together all dry ingredients to remove clumps and ensure even distribution.
- Pour the wet blended base into the dry mixture and stir until just combined.
- Divide or pour the batter into your prepared pan: fill muffin or donut cups evenly or spread the batter evenly in the brownie baking dish.
- Let cool in the pan or baking dish for 10 minutes before indulging. The longer they sit, the better!
Optional Maple Butter Topping
Melt maple butter and pour it over the goodies. Once cooled, it sets up like icing on a donut.
